Jamie Jo Simon, 41, of Stover, passed away Tuesday, August 12, 2025, at her home.

She was born on November 7, 1983, in Sedalia, MO, a daughter of Steve and Debbie (Garr) Eckhoff. On April 3, 2004, at St. Paul’s Lutheran Church in Stover she married Mitchell Simon who is a survivor of the home.

Jamie was a 2002 graduate of Stover High School. She was a beloved member of Christ Lutheran Church in Stover, where her faith was a guiding light in her life. She had a special gift for caring for others, especially children and babies, providing loving childcare to many families in the community.

Jamie enjoyed the simple joys of life and embraced opportunities to be outdoors. She loved camping, relaxing at the beach, spending time by the water—especially in her swimming pool—and visiting the mountains. She found beauty in nature, with cardinal birds holding a special place in her heart and bluebirds being her very favorite.

Family was at the center of Jamie’s world, and together they formed a bond so strong they lovingly referred to themselves as “the tribe”. Her greatest love was her children and family, and she never missed an opportunity to support them, especially when it came to attending her children’s sporting events.

Jamie’s warm heart, laughter, devotion to family, and joy for life will be deeply missed by all who knew and loved her. She leaves behind a legacy of love, care, and treasured memories that will continue to inspire those she touched.

Survivors include her parents, Steve and Debbie; husband, Mitchell; three children, Kiley, Jaxon, and Logan Simon all of Stover; one brother Kyle Eckhoff and Raven her sister; along with her other sisters, Candace Bauer (Spencer), and Courtney Garr (Cory); niece and nephew, Emma and Noah Eckhoff; her father and mother-in-law, Bob and Sheryl Simon; close cousins, Miranda Bolinger and Erin Eckhoff.

Jamie was preceded in death by her grandparents, Mary and Marvin Eckhoff and one cousin, Kayla Eckhoff.

Visitation will be held from 10:00 a.m. to 12:45 p.m. at Christ Lutheran Church in Stover on Saturday, August 16, 2025. Memorial services will be held at 1:00 p.m. at the church with burial to follow in the Stover Cemetery. Memorial contributions are suggested to the family with checks payable to Mitchell Simon.
