Eunice Ilene Parnell Officer, 74, of Stover MO, departed to be face-to-face with her Lord on Tuesday evening, July 14, 2026, at Golden Age Living Center, Stover, Missouri surrounded by family. Eunice was born December 11, 1952 in Wenatchee, Chelan County, Washington. Eunice graduated from Berean Academy, a private Christian school in 1971 as Salutatorian. Her Education continued with several years of college at Briarcrest Bible Institute and Prairie Bible Institute pursuing Biblical Missionary training. However, her passion for working with people led her into nursing and she achieved her Registered Nursing Degree from Hutchinson Community College and Hutchinson Hospital School of Nursing, both out of Hutchinson, Kansas in 1977. She further went on to obtain her Gastroenterological Clinician and Surveyor of Minimum Quality Testing certificates. Due to her work with people she later decided to pursue a Bachelors degree in Human Resources from Friends University out of Wichita, Kansas. Eunice worked as a Registered Nurse, a Kansas State Surveyor and ran her own business, called Alternate Solutions where she pursued improvement in nursing management, quality improvement and alternative healthcare, both for patients as well as nursing staff. In her never ending search for knowledge Eunice was always reading books. She was an avid animal lover and won numerous awards for showmanship of horses using the dressage method, with both customers horses and her own horses, and taught others in the care and training of horses, along with caring for numerous dogs and cats, both hers and anyone she met with animals.

Eunice is survived by siblings, Naomi (Gary) Ullum, Lois (Marty) Weber, and James, better known as Jim (Joan) Parnell; and nieces/nephews, David, Crista, Amanda, Matthew, DJ, Joshua and John, their spouses and children. Eunice was predeceased by her parents Harold Parnell and Joyce McCormick, and her youngest sister Esther Goering.

According to Eunice's desire, her ashes will be spread at her old home of 27 years at 724 Big Buffalo Road, Stover, MO, on Saturday, August 1st, at 4:00 p.m. for anyone wanting to participate. Following, at 5:30 p.m. for family and friends a Celebration of Life will be held at The Church of Jesus Christ of Latter-day Saints, 31469 MO-5, Tipton, MO 65081, at. At 6:15 a dinner will be provided by the Church.

Contributions may be made in Eunice's name to either Compassus Hospice, 5780 Osage Beach Parkway, Suite 230, Osage Beach, MO 65065, or Stover Animal Rescue, 709 W. 4th St., Stover, MO 65078.

Scrivner-Page-Dady Funeral Homes, Stover, MO will provide cremation services.

Eunice had a kind and loving heart, willing to help those who asked, and always looking for ways to better mankind. She will be missed by those who loved her.
